Healthy Recipe: Crustless Cobbler

INGREDIENTS:

•1 apple

•1 pear

•1 peach

•2 Splendas

•Cinnamon to taste

•Fat Free Redi Whip

INSTRUCTIONS:

1.Slice all fruit and place in microwave safe bowl.

2.Sprinkle with cinnamon and 2 packets of Splenda.

3.Mix and microwave for 2-3 minutes or until the fruit is tender.

4.Let stand for 5 minutes to thicken.

5.Top each servings with 2 Tbsp Fat Free Redi Whip

6.Enjoy!

Healthy Recipe: Pepperoni Chips & Chipotle Dip

INGREDIENTS:

  • 1/2 C Greek Yogurt
  • 1 tsp Spicy Ranch seasoning packet (Hidden Valley)
  • 1 oz Turkey Pepperoni

 

INSTRUCTIONS:

1.     In a small bowl, add spicy ranch seasoning to 1/2 C of the greek yogurt.

2.     Mix thoroughly.

3.     Place pepperoni on a sheet of parchment paper in the microwave for 60-90 seconds until crunchy.

Dip and Enjoy!

Servings: Entire Recipe= 2 proteins

Healthy Recipe: Arugula & Feta Salad with Strawberry Vinaigrette

INGREDIENTS:

  • 2 C strawberries, halved
  • 1 scallion, trimmed
  • 1 garlic clove
  • 2 Tbsp Light Rice vinegar
  • 2 Tbsp Extra Virgin Olive Oil
  • 1 tsp dried tarragon
  • 1/2 whole grain mustard
  • 1/2 – 1 tsp Splenda
  • Salt and Pepper to taste
  • 10 C Arugula
  • 1 C Fat Free feta cheese crumbles
  • 4 oz sliced grilled chicken

 

INSTRUCTIONS:

1.     Puree 4 strawberries and scallion in a small food processor. Add garlic, vinegar, oil, tarragon, mustard, salt and pepper; pulse until well combined.

2.     Toss arugula and feta in a large bowl. Add the remaining sliced strawberries and chicken into the bowl.

3.     Toss salad with the dressing.

 

SERVINGS: Divide by 4. Each serving= 2 Protein, 1/2 Fruit

Healthy Recipe | Loaded Zucchini

INGREDIENTS:

  • 2 medium zucchinis, stem ends removed
  • 2/3 C. Jimmy Dean Turkey Sausage Crumbles
  • 1 tsp. garlic, fresh or minced
  • 1 Tbsp olive oil
  • 1/4 tsp Badia fajita seasoning
  • 2 Tbsp. Cilantro, chopped
  • 1/2 C. Reduced fat Cheddar or Mexican blend cheese

INSTRUCTIONS:

1.     Pre-heat oven to 350 degrees.

2.     Cut 1/4 inch off each zucchini end and slice zucchini lengthwise in half.

3.     Drizzle 1 Tbsp olive oil over the zucchini.

4.     In a small bowl, mix together the fajita seasoning, garlic, cilantro and Jimmy Dean turkey sausage crumbles.

5.     Grease cookie sheet and lay zucchini in a single row.

6.     Top zucchini halves with sausage mixture and 1/4 C. of cheese.

7.     Bake for 35 minutes, top with remaining cheese and serve.

SERVINGS: Entire recipe: 4 proteins & 2 veg. Makes 2 servings.

America: home of the free and the gluttonous. 
2/3 of American adults are overweight. And 1/3 of those are obese.

With crazy, jam-packed schedules and the ease of unhealthy fast food options, it’s easy to understand how our nation has transformed into a society with ever expanding waistlines.
In 2012, Mississippi took the prize for being the fattest state in the nation. And while Florida doesn’t rank in the top 10, we certainly aren’t the leanest state by any stretch of the imagination. 62.4% of Florida’s population falls into the overweight category with 25.9% spilling into the obese range. But we don’t have to continue falling prey to this unhealthy trend. Simple changes in our every day routine can not only help us lose weight but also reduce our risk for some of the diseases and health ailments commonly associated with excess weight.
