Healthy Recipe: Vegetable Konjac Pasta
INGREDIENTS:
- 1 packet konjac pasta
- 1/2 cup chopped onions
- 1 medium chopped tomato
- 1/4 cup chopped bell pepper
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1/4 tsp salt
- 1 tsp garlic powder
- 1/4 tsp oregano
- 1/4 tsp basil
- 1/4 tsp thyme
INSTRUCTIONS:
In large bowl, gently mix all ingredients. Refrigerate until cold, allowing mixture to set for a hour before serving to enhance the flavor.
Serving size: 1

The Low-Down Healthy Truth About Fats
It takes fat to burn fat. And like carbohydrates, not all fats are created equal but they are essential, especially when it comes to weight loss.
Like carbohydrates, there are good fats and bad fats. When it comes to good fats, there are 2 types that fall into this category: monosaturated fats and long-chain omega-3 fats. Monosaturated fats come from olive oil, selected nuts and avocados. Long-chain omega-3 fats come from fish and fish oils. These are the healthy fats that you want to incorporate into your diet, especially if you’re trying to lose weight. These are good fats because they play an indirect role in helping lower the insulin response to carbohydrates. Additionally, they send a hormonal signal to the brain saying “stop eating.” And the fewer calories you eat, the less insulin you make. If you don’t eat fat and replace it with carbohydrates, you are virtually guaranteeing you will become fatter.
But, just like there are good carbs and bad carbs, there are good fats and bad fats. The bad fats need to be restricted from your diet. Bad fats include saturated fats, trans-fats and arachidonic acid. You find these fats in fatty cuts of red meat, high-fat dairy products, artificial fats in virtually all processed foods such as “partially hydrogenated vegetable oil.” These bad fats don’t only lead to excess weight, they also lead to deadly diseases like heart disease.
Eating the right types of fats at the right time in the proper amount helps maintain insulin levels – this is extremely important if you are trying to lose weight. Healthy Recipe: Italian Konjac Pasta
INGREDIENTS:
- 1 packet of konjac noodles
- 1/2 tsp olive oil
- 1/2 cucumber, diced
- 1/2 bell pepper chopped
- 1 tomato, diced
- 1/2 onion diced
- 9 oz sugar-free tomato sauce
- 4 oz Italian dressing (use spray dressing)
INSTRUCTIONS:
- Drain and rinse konjac pasta with cold water. Then drain and add olive oil. Add remaining ingredients. Add red wine vinegar to taste.
Serving size: 2

Weight Loss 101: Are You at a Genetic Disadvantage

If you’re anything like me, just looking at a potato chip seems to make you gain weight. And if you’re not, you could be like my good friend who can eat ten bags of potato chips without gaining an ounce.
Why is it that some of us can eat carbs to our hearts content without gaining weight while others of us gain weight almost at the mere glimpse of a carb?
Insulin. About 75% of us have a relatively strong insulin response to carbohydrate. Meaning that if we eat too many carbohydrates, our bodies react by making too much insulin. It’s our genetic make-up that determines the amount of carbohydrates your body can handle without producing excessive insulin. What happens if your body produces too much insulin? Not only does excess insulin make your blood sugar fall too quickly, thereby resulting in fatigue and hunger for more carbs, it also makes you your body store fat and prohibit the burning of fat. As a result, excess insulin, makes you fat, keeps you fat, induces fatigue and makes you crave more carbohydrates. It’s a vicious cycle.
How can you tell if your sensitive to carbohydrates?
At lunch time, eat a big pasta meal. If you are hungry and ready to take an afternoon siesta three hours later, then you fall into the 75% of the population who are not so genetically lucky.

Is Green Tea Effective for Weight Loss?

Healthy Recipe: Blackened Tuna Salad
INGREDIENTS:
- 2 tbsp black pepper
- 1/8 tsp dried thyme
- 1 lb fresh tuna steak cut into 4 equal pieces
- 3/4 c Walden Farm Balsamic Vinaigrette
- 1 tsp garlic powder
- 3 c chopped romaine lettuce
- 1/4 tsp lemon pepper
INGREDIENTS:
- Mix the black pepper, garlic powder, lemon pepper, thyme and salt together in a small bowl.
- Rub the spice mixture all over the tuna to coat.
- Preheat a medium nonstick skillet over high heat.
- Add the tuna and sear for about 3 minutes each side.
- Mound salad on 4 plates.
- Top each with the seared tuna and drizzle with the vinaigrette.
